Join Louella Hill--best known in these parts as 'The Milk Maid'--for a hands-on workshop about the art of creating homemade Stilton-style blue cheese. Louella has spent ten years perfecting cheesemaking in Italy and throughout the States.
For the un-initiated, blue cheese is best known for its characteristically strong smell and taste. Stilton blue cheese is among the best-known varieties, hailing from three small counties in Britain. The recipe used to create homemade Stilton-style cheese has been essentially unchanged since the early 18th century.
About the teacher: While a student at Brown University, Louella spent a year abroad in Italy. There--at an Italian sheep farm--she fell in love with the art of cheesemaking. After developing her skills as a cheesemaker at five creameries over ten years, Louella moved to San Francisco to start her company, The Milk Maid, in order to share her love for all things cheese. This class requires no previous cheesemaking experience.
