Class: Homemade Blue Cheese

Join Louella Hill--best known in these parts as 'The Milk Maid'--for a hands-on workshop about the art of creating homemade Stilton-style blue cheese. Louella has spent ten years perfecting cheesemaking in Italy and throughout the States.


For the un-initiated, blue cheese is best known for its characteristically strong smell and taste. Stilton blue cheese is among the best-known varieties, hailing from three small counties in Britain. The recipe used to create homemade Stilton-style cheese has been essentially unchanged since the early 18th century.

About the teacher: While a student at Brown University, Louella spent a year abroad in Italy. There--at an Italian sheep farm--she fell in love with the art of cheesemaking. After developing her skills as a cheesemaker at five creameries over ten years, Louella moved to San Francisco to start her company, The Milk Maid, in order to share her love for all things cheese.
