The restaurant takes its name from a 1945 western starring Robert Mitchum, which is actually called West of the Pecos, and the team brought in as much Old West authenticity as they could, including a couple of 100-year-old saloon-style doors from Santa Fe, reclaimed wood, a great big steer skull on one wall which they've named Hornsby, and axes for door handles.

On the food side, Santa Fe native Leo Varos is running the show in the kitchen. He’ll have a big “pizza oven” to play with, though instead of pizzas, West of Pecos will be cooking fresh tortillas and roasting meats in there. The menu will be rustic, Southwestern American (green chile burgers!), while the bar program will be led by Tequila, Mezcal and whiskey: the old school stuff, Dylan MacNiven says. And you should probably look at the chalice-like 20-ounce schooner (pictured above) that they’ll use for draft beers.
